For a richer flavor, use smoked kielbasa. If you don't have a spaetzle maker, you can use a colander with large holes, or simply cut the dough into small pieces and drop them into the boiling water. Rinsing the sauerkraut helps to reduce its acidity. If you prefer a more intense flavor, you can skip this step. This casserole can be assembled ahead of time and baked just before serving.
