Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x9-inch baking dish. (5 minutes)

In a large bowl, whisk together flour and salt. In a separate bowl, whisk eggs and water until combined. Gradually add the wet ingredients to the dry ingredients, mixing until a smooth dough forms. (5 minutes)

Bring a large pot of salted water to a rolling boil. Using a spaetzle maker, or a colander, press the dough through into the boiling water. Alternatively, spread dough on a cutting board and cut small pieces into the water. Cook spaetzle until they float to the surface, about 3-5 minutes. Remove with a slotted spoon and transfer to the prepared baking dish. (10 minutes)

In a large skillet, cook bacon over medium heat until crisp, about 6-8 minutes. Remove bacon with a slotted spoon and set aside on paper towels, reserving the bacon drippings in the skillet. (8 minutes)

Add chopped onion to the skillet with the bacon drippings and cook over medium heat until softened and lightly browned, about 8-10 minutes. Transfer the cooked onion to a bowl. (10 minutes)

Melt butter in the same skillet over medium heat. Add chopped apple and brown sugar. Cook, stirring occasionally, until apples are tender and slightly caramelized, about 5 minutes. (5 minutes)

Stir in the cooked bacon, onion, and sauerkraut into the apple mixture. Cook, stirring often, until all the flavors have melded together, about 5 minutes. (5 minutes)

Transfer the sauerkraut mixture to the baking dish, spreading it evenly over the spaetzle.

Place kielbasa pieces in a microwave-safe dish and microwave on high until heated through, about 2-3 minutes. Arrange the kielbasa pieces on top of the sauerkraut mixture. (3 minutes)

Bake in the preheated oven until the casserole is heated through and bubbling, about 15-20 minutes. (20 minutes)

Let cool slightly before serving.

For a richer flavor, use smoked kielbasa.
If you don't have a spaetzle maker, you can use a colander with large holes, or simply cut the dough into small pieces and drop them into the boiling water.
Rinsing the sauerkraut helps to reduce its acidity. If you prefer a more intense flavor, you can skip this step.
This casserole can be assembled ahead of time and baked just before serving.
