Set the temperature to 134 degrees F (57 degrees C) and cook for 18 hours. Cover the top of the container with plastic wrap to help maintain water levels and temperature. (Cook time: 18 hours)

Once the cooking time is complete, remove the roast from the bag and thoroughly pat it dry with paper towels. This step is crucial for achieving a good sear. (Prep time: 5 minutes)

Heat 2 tablespoons of avocado oil in a large skillet over high heat until the oil shimmers. Add the roast and sear on all sides until a rich, even brown crust forms, about 2 to 3 minutes per side. Add more avocado oil if needed to prevent sticking. (Cook time: 10 minutes)
