Add the chopped onion and continue cooking, stirring occasionally, until both the bacon and onion are evenly browned and the onion is translucent (about 5 minutes more). Drain off excess bacon grease, reserving 2 to 3 tablespoons in the skillet.

Add the cubed potatoes to the skillet with the bacon and onion mixture. Cover the skillet, reduce heat to low, and simmer, stirring occasionally, until the potatoes are lightly browned (approximately 5-7 minutes).

Transfer the bacon, onion, and potato mixture to a medium-sized pot. Add the cream-style corn, drained sweet corn, and water. Bring the mixture to a boil, then reduce heat to low and simmer gently, stirring occasionally, until the potatoes are tender and easily pierced with a knife (about 15 minutes). Season generously with salt and freshly ground black pepper to taste.

In a separate small pan, gently warm the half-and-half over medium-low heat until it is just heated through and small bubbles begin to form around the edges (do not boil). Remove from heat and stir the warmed half-and-half into the stew until the desired consistency is reached. Garnish with freshly chopped parsley before serving.

For an even smokier flavor, consider using smoked paprika or adding a splash of liquid smoke to the stew.
If you prefer a thicker stew, mash some of the potatoes against the side of the pot before adding the half-and-half.
This stew is even better the next day, as the flavors have time to meld together. Store leftovers in an airtight container in the refrigerator.
