Heat olive oil in a large skillet over medium-high heat. Season pork loin roast generously with salt and pepper. Sear on all sides until nicely browned, about 3-4 minutes per side. Transfer the seared pork loin to a 6-quart slow cooker. (Total time: 15 minutes)

Add peeled garlic cloves to the same skillet. Cook over medium-high heat, stirring frequently, until golden brown and fragrant, approximately 5 minutes. Add diced onion and cook until softened and translucent, about 3 minutes. Sprinkle all-purpose flour evenly over the garlic and onion mixture, then cook and stir for 2 minutes to create a roux. (Total time: 10 minutes)

Pour chicken broth into the skillet, using a wooden spoon to scrape up any browned bits from the bottom of the pan. Bring the mixture to a boil, then stir in fresh lemon juice and Italian seasoning. Season with salt and pepper to taste. Pour the broth mixture and honey evenly over the pork loin in the slow cooker. (Total time: 5 minutes)

Cover the slow cooker and cook on Low heat for 6 hours or on High heat for 3 hours, or until the pork is fork-tender. (Total time: 3-6 hours)

Pour the cooking liquid from the slow cooker into a saucepan and bring to a boil over medium heat. Reduce the heat to medium-low and simmer until the sauce has thickened slightly, about 2-3 minutes. Lightly mash some of the garlic cloves with a fork to release their flavor. (Total time: 10 minutes)

For an even richer flavor, consider adding a splash of balsamic vinegar to the sauce during the last 30 minutes of cooking.
If you prefer a thicker sauce, whisk 1 tablespoon of cornstarch with 2 tablespoons of cold water to create a slurry. Stir the slurry into the sauce during the last 15 minutes of cooking.
