Pat the grouper fillets dry with paper towels. Add the fillets to the hot skillet, skin-side down if using skin-on fillets. (1 minute)

Cook until lightly browned and crisp on one side, about 3-4 minutes. Carefully flip the fillets and transfer them to a plate. Season the uncooked sides with salt and pepper, and keep warm.

Heat the remaining 1 tablespoon of olive oil in the same skillet over medium heat. Add the chopped red onion and cook, stirring occasionally, until softened, about 3 minutes.

Add the minced garlic and cook, stirring constantly, until fragrant, about 30 seconds.

Stir in the chopped Roma tomatoes, red wine vinegar, and agave nectar. Move the vegetables to one side of the skillet. (2 minutes)

Return the grouper fillets to the skillet, uncooked side down. Evenly distribute the vegetables around and over the fillets. Sprinkle the capers on top. Season with salt and pepper. (1 minute)

Cook, uncovered, until the thickest part of the fillets flakes easily with a fork and the tomatoes have softened, about 4-5 minutes.

Serve the fillets immediately with the flavorful tomato sauce. Garnish with fresh parsley.

For a richer flavor, use high-quality canned San Marzano tomatoes.
A pinch of red pepper flakes can add a nice touch of heat.
Serve with crusty bread for soaking up the delicious sauce.
Feel free to substitute other firm white fish, such as cod or snapper, for the grouper.
If you want to add more vegetables, consider sliced bell peppers or olives. Add it in step 4.
