Unroll 1 crescent dough sheet on a lightly floured surface and gently press it into a 9x12-inch rectangle. Using a sharp knife or pizza cutter, cut 6 rows across and 4 rows vertically to yield 24 squares. Repeat with the second package of dough. (10 minutes)

Place 1 square in each cup of two nonstick 24-cup mini muffin tins. Gently press the dough into the bottom and up the sides of each cup, forming a small well. (10 minutes)

Drop 1 heaping teaspoon of the sausage filling into each dough-lined cup. The filling should reach the top of the cup, but do not press it down. (10 minutes)

Bake in the preheated oven until the crescent dough is golden brown and the filling is bubbly, 11 to 13 minutes. (12 minutes)

Remove the mini muffin tins from the oven and let the sausage cups cool for 5 minutes in the tins before carefully transferring them to a serving platter. (5 minutes)

For an extra touch of flavor, consider adding a pinch of garlic powder or a dash of hot sauce to the sausage mixture.
Feel free to substitute the vegetables with your favorites, such as diced mushrooms or chopped spinach.
These sausage cups can be prepared ahead of time and stored in the refrigerator until ready to bake. Add a few extra minutes to the baking time if baking from cold.
To ensure even baking, rotate the muffin tins halfway through the baking time.
