Top with remaining crackers, top sides up. Place baking sheet in the refrigerator and chill for at least 30 minutes. (30 minutes)

In the top of a double boiler melt chocolate chips and melting wafers over medium heat, stirring occasionally, until smooth. (15 minutes)

Using a fork, dip cracker sandwiches into chocolate, allowing excess to drip back into the bowl. (15 minutes)

Return sandwiches to prepared baking sheet. If desired, sprinkle lightly with flaky sea salt. (5 minutes)

Chill sandwiches for 15 minutes or until chocolate is set. Store cookies in the refrigerator. (15 minutes)

For an extra touch of elegance, drizzle melted white chocolate over the chilled cookies.
If you don't have a double boiler, you can create one by placing a heat-safe bowl over a saucepan of simmering water, ensuring the bottom of the bowl doesn't touch the water.
