Preheat the oven to 350 degrees F (175 degrees C). Spray a baking dish with cooking spray. Slice one lemon and juice the second lemon; set aside.

Melt butter in a medium skillet over medium heat. Add onion and garlic; saute until golden brown (7 to 8 minutes). Remove from the heat.

Gently combine the crab and lobster meat in a bowl. Mix in the onion mixture, goat cheese, and lemon juice.

Cut each salmon piece in half, creating a pocket. Carefully fold the crab and lobster stuffing into each salmon fillet and secure with kitchen twine. Place in the prepared baking dish. Arrange lemon slices on top of the salmon and brush with barbecue sauce.

Cover the baking dish and bake in the preheated oven for 45 minutes. Uncover and bake until the fish flakes easily with a fork, approximately 15 more minutes.

For an extra touch of elegance, garnish with fresh dill or parsley before serving.
Feel free to adjust the amount of barbecue sauce to your liking. A touch of hot sauce can also add a delightful kick.
Ensure the salmon is cooked through but not overcooked. Overcooked salmon can become dry.
The stuffing can be prepared ahead of time and stored in the refrigerator until ready to use.
