Preheat oven to 350 degrees F (175 degrees C). Coat a 9-inch pie plate with nonstick cooking spray. (Prep time: 5 minutes)

Heat olive oil in a large skillet over medium heat. Add Swiss chard, mushrooms, and onion. Cook, stirring occasionally, until the greens are wilted and the mushrooms are tender, about 10 minutes. (Cook time: 10 minutes)

Spread the Swiss chard mixture evenly on the bottom of the prepared pie plate. Arrange smoked salmon pieces artfully over the chard. In a separate bowl, whisk together the eggs, milk, salt, nutmeg, and black pepper. Pour the egg mixture gently over the salmon and Swiss chard. (Prep time: 5 minutes)

Bake in the preheated oven until a knife inserted into the center comes out clean, approximately 28 to 30 minutes. (Bake time: 30 minutes)

Remove from the oven and let cool for about 10 minutes before slicing into wedges. Garnish with freshly chopped chives just before serving for a pop of color and fresh flavor. (Cooling & Garnish: 10 minutes)

For a richer flavor, consider using whole milk or adding a small amount of cream to the egg mixture.
Feel free to experiment with different types of mushrooms, such as cremini or shiitake, for a more complex flavor profile.
If you don't have smoked salmon on hand, you can use cooked salmon instead. Adjust seasoning accordingly.
The quiche can be made ahead of time and reheated. Store it in the refrigerator and warm it gently in the oven before serving.
