Combine rhubarb, light green and white parts of green onion, butter, lime juice, rice vinegar, honey, 1/2 teaspoon salt, and cayenne in a saucepan. Bring to a simmer over medium-high heat. (3-4 minutes)

Cook, stirring occasionally, until the mixture becomes a chunky sauce. Remove from heat and set aside.

Preheat the oven to 450 degrees F (230 degrees C).

Oil a baking dish large enough to fit the salmon pieces, spaced 1 or 2 inches apart. Place the salmon in the dish and season generously with the remaining 1 teaspoon of salt.

Spoon the rhubarb mixture over the top of each piece of salmon, covering the surface, and then spoon any remaining sauce in between the fillets.

Roast in the preheated oven until an instant-read thermometer inserted into the thickest part of the salmon reaches 125 to 130 degrees F (50 to 54 degrees C). (15-20 minutes)

Garnish with thinly sliced green onion tops, and serve immediately.

For a deeper flavor, consider adding a teaspoon of grated ginger to the rhubarb sauce.
If rhubarb is unavailable, substitute with cranberries or chopped apples for a similar tartness.
Ensure your salmon fillets are of equal thickness for even cooking.
