For a more intense flavor, try soaking the peanuts in salted water for 30 minutes before roasting. Pat them dry before placing them on the baking sheet. The roasting time may vary slightly depending on your oven. Keep a close eye on the peanuts during the last 15 minutes of roasting and adjust accordingly. If they're not quite crisp after an hour, you can turn the oven back on to a low setting (around 200 degrees F) for a few more minutes, checking frequently to avoid burning. Store leftover roasted peanuts in an airtight container at room temperature for up to a week.
