Roast the garlic: Bake in the preheated oven until the garlic cloves are soft and yielding when lightly pressed – approximately 1 hour. (60 minutes)

Cool and chill: Unwrap the foil and allow the roasted garlic to cool at room temperature for 5-10 minutes. Then, refrigerate until completely chilled. (40 minutes)

Combine and blend: Using a sharp knife, carefully extract the individual garlic cloves. Place them in a small bowl and mash with a fork until smooth and creamy. Incorporate the mayonnaise, fresh lemon juice, Worcestershire sauce, and a pinch of cayenne pepper. Mix until thoroughly blended. (10 minutes)

Chill and develop flavors: Refrigerate the aïoli for at least 1 hour to allow the flavors to meld and deepen. (60 minutes)

For an even smoother aïoli, consider using an immersion blender or food processor to blend the ingredients.
Adjust the amount of cayenne pepper to your preference for heat.
Roasted Garlic Aïoli is best enjoyed within 3-5 days, stored in an airtight container in the refrigerator.
