For a deeper, smokier flavor, use smoked paprika instead of regular paprika. Store the spice rub in an airtight container in a cool, dark place for up to 6 months. Adjust the amount of cayenne pepper to your preferred level of spice. This rub is also delicious on other poultry, such as turkey or duck.
