For a richer flavor, use roasted walnuts. Adjust the amount of goat cheese to your preference. A balsamic glaze can be used instead of champagne vinegar for a sweeter note. Feel free to add other greens like arugula for extra flavor and texture.
Earthy beets, creamy goat cheese, and crunchy walnuts unite in this vibrant dish. A delightful dance of textures and flavors, perfect as a sophisticated starter, a light lunch, or an elegant side.
Preheat oven to 275°F (135°C). Spread walnuts on a baking sheet. (5 minutes)
Toast walnuts until golden and fragrant, about 4-5 minutes. Watch carefully to prevent burning. Remove and set aside. Increase oven temperature to 375°F (190°C). (45 minutes)
Create a makeshift rack by crinkling aluminum foil in an oven-safe dish. Place beet on the foil. (5 minutes)
Bake beet until almost tender, about 45 minutes. Remove and increase oven temperature to 400°F (205°C). (45 minutes)
Wrap beet in foil and cool for 15-30 minutes. Peel and slice into thick half-moons. (30 minutes)
Brush walnut oil in a baking dish. Arrange beet slices in a single layer. Crumble goat cheese over beets. Season with salt and pepper. (10 minutes)
Bake until beets are sizzling and cheese is lightly browned, about 15 minutes. (15 minutes)
Remove from oven and cool for 10 minutes. Drizzle with vinegar, garnish with beet greens, chives, and toasted walnuts. Serve warm. (10 minutes)
For a richer flavor, use roasted walnuts. Adjust the amount of goat cheese to your preference. A balsamic glaze can be used instead of champagne vinegar for a sweeter note. Feel free to add other greens like arugula for extra flavor and texture.
