For an extra layer of flavor, try adding a pinch of red pepper flakes to the dressing.
Fresh oregano is key for that authentic Greek taste, but dried oregano can be substituted (use about 1 teaspoon).
If you're short on time, you can use marinated artichoke hearts (drained) instead of roasting them. Just skip steps 2 and 3.
