For a richer flavor, use a high-quality Dijon mustard. Don't overfill the pinwheels, or they will be difficult to roll and slice. If the puff pastry becomes too soft while you're working with it, return it to the refrigerator for a few minutes to firm up. For a spicier kick, add a pinch of red pepper flakes to the filling. These pinwheels can be made ahead of time and baked just before serving. If you don't have caraway seeds, poppy seeds or everything bagel seasoning can be used as a substitute.
