If you don't have star anise, a pinch of ground cloves or allspice can be used as a substitute. Feel free to experiment with different types of chocolate. Dark chocolate, milk chocolate, or even white chocolate would all be delicious. The poached pears can be made ahead of time and stored in the refrigerator for up to 2 days. Reheat gently before serving.
