For a nut-free version, substitute sunflower seeds or pumpkin seeds for the almonds. To add a touch of heat, include a pinch of red pepper flakes in the dressing. This salad can be made a day ahead. The flavors will continue to develop, but the vegetables may soften slightly. Add the bacon just before serving for maximum crispness. If you don’t have Parmesan, a hard Pecorino Romano will also work nicely.
