Follow The Directions

Step

Preheat oven to 400 degrees F (200 degrees C). Line 2 baking sheets with silicone baking mats. (5 minutes)

Divide potato slices between the baking sheets. Drizzle olive oil over slices and season generously with salt and pepper. (2 minutes)

Roast in the preheated oven until slightly softened, about 10 minutes. Rotate and switch baking sheets on the oven racks. Continue roasting until golden brown and tender, about 10 minutes more. Let cool completely on the baking sheets. (25 minutes)

In a medium bowl, whisk together the mayonnaise, sour cream, Dijon mustard, apple cider vinegar, balsamic vinegar, smoked paprika, salt, and pepper until smooth and creamy. Adjust seasonings to taste. (5 minutes)

In a separate bowl, combine the finely chopped celery, radishes, and cornichons. Chop the leaves from 1 sprig of dill and mix into the vegetable mixture. (7 minutes)

Once the potato slices are completely cool, spoon about 1/2 teaspoon of the dressing over each slice. Top with 1 teaspoon of the celery mixture. Sprinkle the finely chopped green onions on top. Garnish each bite with a small frond of dill from the remaining 2 sprigs. (15 minutes)

For a vegan version, substitute vegan mayonnaise and sour cream.
Feel free to experiment with different herbs, such as chives or parsley, in place of or in addition to the dill.
The roasted potato rounds can be prepared ahead of time and stored in an airtight container at room temperature for up to 24 hours.
Assemble the bites just before serving to prevent the potato rounds from becoming soggy.
