Step

Prepare the Potatoes: Using a spiralizer with a medium grating attachment, cut the potatoes into long spirals. After every 4-5 rotations, cut the spirals with kitchen shears to prevent excessively long strands. (5 minutes)

Soak and Dry: Place the potato spirals in a bowl of cold water and soak for 20 minutes. This helps remove excess starch for optimal crispness. Drain the potatoes thoroughly, rinse well, and pat completely dry with paper towels. The drier they are, the crispier they will become. (30 minutes)

Season: Transfer the dried potato spirals to a large resealable plastic bag. Add the canola oil, kosher salt, and freshly ground black pepper. Seal the bag and toss well to ensure the potatoes are evenly coated. (5 minutes)

First Fry: Preheat your air fryer to 360 degrees F (180 degrees C). Place half of the potato spirals in the air fryer basket, ensuring they are in a single layer and not overcrowded. Cook for 5 minutes, until they begin to turn golden.

Second Fry: Increase the air fryer temperature to 390 degrees F (200 degrees C). Remove the basket and toss the potato spirals gently with tongs to redistribute them. Return the basket to the air fryer and continue cooking, tossing occasionally, for 10-12 minutes, or until the potato hay is a rich, golden brown and crispy. (12 minutes)

Repeat: Reduce the temperature back to 360 degrees F (180 degrees C) and repeat the process with the remaining potato spirals. Serve immediately and enjoy!

For extra flavor, consider adding a pinch of garlic powder or smoked paprika to the potato spirals along with the salt and pepper.
Ensure the potato spirals are in a single layer in the air fryer basket for even cooking. Overcrowding will result in steamed, rather than crispy, potatoes.
Air fryer cooking times may vary slightly depending on the model. Keep a close eye on the potatoes during the second fry to prevent burning.
