Preheat broiler with rack 6 inches from heat source. Line a baking sheet with aluminum foil and spray with cooking spray. (5 minutes)

Melt butter and olive oil together in a skillet over medium-high heat. Saute mushrooms, scallions, and garlic in hot skillet until mushrooms have released their liquid and the liquid evaporates. Remove from heat, stir in parsley, and let mixture cool slightly. (15 minutes)

In a bowl, combine the mushroom mixture, cream cheese, Parmesan cheese, and Creole seasoning. Stuff each hollowed-out poblano pepper with the mixture and place on the prepared baking sheet. (10 minutes)

Broil in the preheated oven, turning once, until stuffing is hot and peppers are browned. Serve immediately. (8-10 minutes)

For a spicier kick, add a pinch of red pepper flakes to the mushroom mixture.
Ensure the cream cheese is fully softened for easy mixing and a smoother filling.
Customize the Creole seasoning to your preference; start with less and add more to taste.
If you don't have Creole seasoning, a mix of paprika, cayenne pepper, garlic powder, and onion powder can be used as a substitute.
The stuffed poblanos can be prepared ahead of time and broiled just before serving.
