Follow The Directions

01

Step
15 mins

In a large bowl, gently combine the mango slices with 3 tablespoons of sea salt. Allow to sit for approximately 15 minutes, drawing out excess moisture and firming the fruit. (Time: 15 minutes)

02

Step
10 mins

In a large, non-reactive pot, combine the remaining 1 tablespoon of sea salt, 3 cups plus 3 tablespoons of filtered water, and granulated sugar. Bring the mixture to a rolling boil over medium-high heat, stirring constantly until the sugar is completely dissolved and the brine is clear. Remove from heat and stir in the white wine vinegar. Allow the brine to cool slightly for about 15 minutes before proceeding. (Time: 20 minutes)

03

Step
20 mins

Thoroughly drain the mango slices, discarding any accumulated liquid. Carefully pack the mango slices into sterilized glass jars, leaving about 1/2 inch of headspace at the top. Slowly pour the cooled brine over the mangoes, ensuring they are completely submerged. Gently tap the jars to release any trapped air bubbles. (Time: 10 minutes)

04

Step
5 mins

Seal the jars tightly with sterilized lids and rings. Refrigerate for at least 2 days, or until the mangoes have turned a vibrant, translucent yellow, indicating they are properly pickled. The flavors will continue to develop over time. (Time: 48 hours)

For an extra layer of flavor, consider adding a few slices of fresh ginger, a pinch of red pepper flakes, or a star anise to each jar before sealing.
Ensure your mangoes are firm and unripe for the best texture. Overripe mangoes will become too soft during the pickling process.
Sterilize your jars and lids properly to ensure the longevity of your pickled mangoes.
