In a bowl, whisk together 1/4 cup red wine, 3 tablespoons olive oil, 1 1/2 tablespoons kosher salt, Italian seasoning, red wine vinegar, 1/2 teaspoon black pepper, and garlic salt. (2 minutes)

Pour the mixture into a resealable plastic bag. Add the rump roast, ensuring it's fully coated with the marinade. Squeeze out any excess air and seal the bag. (3 minutes)

Marinate the roast in the refrigerator for at least 8 hours, or preferably overnight, to allow the flavors to fully penetrate the meat. (8 hours or overnight)

Remove the roast from the marinade and shake off any excess. Discard the remaining marinade responsibly. (1 minute)

In a large skillet, melt the butter over medium-high heat. Add the roast and sear it on all sides until nicely browned, approximately 10 minutes. This step is crucial for developing rich flavors. (10 minutes)

Transfer the seared roast to a slow cooker. Add the halved carrots, celery chunks, vegetable broth, chopped onion, fresh parsley, remaining 1/2 cup red wine, remaining 4 tablespoons olive oil, minced garlic, salt, and pepper to the slow cooker. (5 minutes)

Cover the slow cooker and cook on Low heat for 9 to 10 hours, or until the roast is incredibly tender and easily falls apart. To ensure it's cooked to perfection, an instant-read thermometer inserted into the center should register at least 145 degrees F (63 degrees C). (9-10 hours)

For an even deeper flavor, consider adding a bay leaf or a sprig of rosemary to the slow cooker.
If you prefer a thicker sauce, you can thicken the cooking liquid with a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) during the last 30 minutes of cooking.
Serve the rump roast with creamy mashed potatoes or polenta to soak up the delicious sauce.
