In a separate small bowl, whisk together flour, brown sugar, white sugar, cinnamon, and salt. Pour melted butter over the dry ingredients and stir with a fork until coarse crumbs form. Sprinkle the crumb topping evenly over the peaches. (10 minutes)

Bake in the preheated oven until the topping is golden brown and the cheesecake filling is set, about 40 minutes. Remove from the oven and let cool completely in the pan before cutting into bars. (70 minutes)

For an extra layer of flavor, consider adding a hint of lemon zest to the cheesecake filling.
If fresh peaches are not available, canned peaches, drained and patted dry, can be substituted.
To prevent the crust from becoming soggy, you can lightly brush it with melted butter before adding the peach preserves.
