Gently lower about 1/4 of the potatoes into the hot oil, ensuring not to overcrowd the fryer. Cook for 2 minutes, stirring occasionally to prevent sticking. Remove the fries with a slotted spoon and place them on a clean wire rack or paper towel-lined baking sheet. Repeat with the remaining potatoes. (15 minutes)

Second Fry: Increase the oil temperature to 350 degrees F (175 degrees C). Fry the potatoes again, in batches, until they are golden brown and crispy, about 5 minutes. Remove the fries with a slotted spoon and place them on a clean wire rack or paper towel-lined baking sheet to drain any excess oil. (20 minutes)

Truffle Infusion: Immediately transfer the hot fries to a large bowl. Drizzle evenly with truffle oil, tossing gently to coat. (2 minutes)

Parmesan & Parsley Finish: Sprinkle generously with finely shredded Parmesan cheese, minced fresh parsley, and sea salt. Toss again to ensure the fries are evenly coated. Serve immediately and enjoy! (3 minutes)
