Evenly spread the vegetable and sausage mixture over the hash browns in the baking dish. Sprinkle the shredded Monterey Jack cheese generously over the top.

Cheddar cheese or a blend of cheeses can be used instead of Monterey Jack.
For a leaner option, use turkey sausage or chicken sausage instead of pork sausage.
If you don't have time to refrigerate overnight, you can bake the casserole immediately, but it may require a longer baking time.
