For a vegetarian option, omit the bacon and use 2 tablespoons of olive oil or vegetable oil instead. You can also add a teaspoon of smoked paprika to mimic the smoky flavor.
Feel free to adjust the amount of jalapeño and cayenne pepper to your preferred level of spice.
If you like a bit of sweetness, consider adding a tablespoon of maple syrup or brown sugar along with the cabbage.
