Heat oil in a wok or heavy pot over medium heat. Add ground pork and cook, breaking it up with a spoon, until browned and crumbly. (Approximately 5 minutes)

Add minced garlic and cook until fragrant. (Approximately 30 seconds)

Add diced opo squash and salt. Cover the wok and cook over high heat, stirring occasionally, until the squash begins to soften. (Approximately 2-3 minutes)

Pour in chicken broth and water, then add chicken bouillon cubes. Bring the mixture to a boil, then reduce heat to medium-low and simmer, stirring occasionally, until the squash is tender and translucent. (Approximately 18-20 minutes)

Remove the wok from heat and allow the soup to cool slightly. Skim off any accumulated fat from the surface.

Stir in fresh parsley. Return the soup to a boil briefly, then remove from heat and serve immediately.

For a vegetarian option, omit the ground pork and use vegetable broth instead of chicken broth.
Adding a pinch of red pepper flakes can give the soup a subtle kick.
Fresh dill can be used if you have no parsley, but use only 1 teaspoon of chopped fresh dill.
