Melt butter in a large casserole or Dutch oven over medium-high heat. Sprinkle with turmeric. Add chicken pieces in a single layer and cook until lightly browned, about 2 to 3 minutes per side. Transfer chicken to a plate and keep warm.

To the same pot, add onion, ginger, and garlic and cook, stirring occasionally, until softened and fragrant, about 2 minutes. Add tomatoes, green beans, curry powder, cinnamon, cumin, and rice. Stir constantly until the spices are fragrant, about 1 minute.

Return chicken and any accumulated juices to the pot, and add bay leaves, fish sauce, and chicken stock. Be sure to scrape up all the browned bits from the bottom of the pot into the sauce.

Adjust the lid to partially cover and vent, and continue to simmer until rice is tender and the liquid is absorbed, 10 to 15 minutes longer.

For a richer flavor, use bone-in, skin-on chicken thighs. You may need to adjust the cooking time accordingly.
Feel free to add other vegetables, such as bell peppers, peas, or carrots.
If you don't have fish sauce, you can substitute with soy sauce or a pinch of salt.
Garnish with fresh cilantro or parsley for a pop of color and freshness.
Serve with a dollop of plain yogurt or raita for a cooling contrast to the spices.
