In a casserole dish, whisk together the garlic, ginger, soy sauce, rice vinegar, sesame oil, curry paste, coconut milk, and water until well combined. Gently fold in the chopped bok choy to coat. Arrange the frozen dumplings evenly over the bok choy mixture. Cover the casserole dish tightly with aluminum foil. (10 minutes)

Bake in the preheated oven until the dumplings are heated through and cooked at the center, approximately 25 minutes. (25 minutes)

Remove the foil and bake for another 5 minutes to let the dumplings brown slightly. (5 minutes)

Carefully divide the dumplings and bok choy among serving plates. Generously spoon the luscious sauce from the pan over each serving. Garnish evenly with chopped parsley, thinly sliced green onions, toasted sesame seeds, and a generous drizzle of chili crunch oil for an extra layer of flavor and texture. Serve immediately and enjoy! (5 minutes)

For an extra layer of flavor, try searing the dumplings in a pan before baking.
Feel free to substitute other vegetables, such as spinach or mushrooms, for the bok choy.
Adjust the amount of red curry paste to your desired level of spiciness.
If you don't have chili crunch oil, a sprinkle of red pepper flakes will also add a nice kick.
