Preheat your oven to 375 degrees F (190 degrees C). Lightly coat a 9x13 inch baking dish with cooking spray. (5 minutes)

In a large skillet, melt butter over medium heat. Add diced celery, onion, and 1 teaspoon salt; cook, stirring occasionally, until the onion softens and becomes translucent, about 5 minutes. Season with black pepper, sage, thyme, rosemary, and cayenne pepper; cook and stir for another minute until fragrant. Remove from heat and stir in the chicken broth to deglaze the pan. (8 minutes)

In a large bowl, combine the crushed crackers and the cooked onion mixture. Add the milk and beaten egg; stir gently until everything is evenly moistened. Season to taste with additional salt and black pepper. (5 minutes)

Transfer the mixture to the prepared baking dish, spreading it evenly. (2 minutes)

Bake in the preheated oven until the top is golden brown and the dressing is set, about 40 to 45 minutes. Let cool slightly before serving. (45 minutes)

For a richer flavor, brown the butter before adding the vegetables.
Feel free to customize the herbs to your liking. Fresh herbs, finely chopped, can also be used; use about 1 teaspoon of each.
If the dressing seems too dry, add a splash more chicken broth or milk before baking.
For a crispier top, broil for the last few minutes of baking, watching carefully to prevent burning.
