In a heatproof bowl, combine the remaining salt, pepper, and paprika with the garlic powder, cayenne pepper, and brown sugar. Mix well. (3 minutes)

For best results, ensure the oil temperature remains consistent throughout the frying process. Use a thermometer to monitor the oil temperature.
Do not overcrowd the pan when frying. Fry in batches to maintain the oil temperature and prevent the mozzarella sticks from sticking together.
For a less spicy version, reduce the amount of cayenne pepper in the seasoning mixture.
