For a richer flavor, try using a combination of mushroom varieties, such as shiitake or oyster mushrooms. Add a splash of dry white wine to the mushrooms while cooking for an extra layer of depth. If you don't have fresh parsley, dried parsley can be used, but use half the amount. To make it vegetarian/vegan, substitute vegetable broth for the chicken broth and olive oil for the butter.
