In a large bowl, combine the grated carrots, drained and rinsed garbanzo beans, and raisins. (5 minutes)

In a separate small bowl, whisk together the olive oil, lemon juice, cumin, chili powder, salt, and freshly ground black pepper until well combined. (2 minutes)

Pour the dressing over the carrot mixture and stir gently to coat all ingredients evenly. (3 minutes)

Cover the bowl and marinate in the refrigerator for at least 2 hours, or up to overnight, to allow the flavors to meld. (2 hours)

Before serving, gently stir in the crumbled feta cheese. (2 minutes)

For an extra layer of flavor, toast the cumin seeds in a dry pan over medium heat for a minute or two before grinding. This will enhance their aroma and depth of flavor.
If you prefer a sweeter salad, you can add a drizzle of honey or maple syrup to the dressing.
Feel free to experiment with other dried fruits, such as chopped dates or apricots, in place of or in addition to the raisins.
This salad is best served chilled or at room temperature.
