In a medium saucepan, whisk together the ketchup, brown sugar, tomato paste, apple cider vinegar, dark corn syrup, pineapple juice, bourbon, water, minced white onion, and lemon juice.

Once boiling, reduce the heat to low and simmer uncovered, stirring occasionally, until the flavors have melded together and the sauce has thickened slightly. This should take approximately 1 hour.

For a dipping sauce: Increase the brown sugar to 1 cup and substitute white vinegar for apple cider vinegar to achieve a sweeter, sharper flavor profile.
This sauce is quite potent, so use it sparingly when basting to avoid overpowering your dish.
Store leftover sauce in an airtight container in the refrigerator for up to 1 week. The flavors will continue to develop over time.
