Follow The Directions

Preheat the oven to 350 degrees F (175 degrees C). (5 minutes)

In a small bowl, thoroughly mix together kosher salt, garlic powder, onion powder, pepper, dill, rosemary, thyme, and Parmigiano-Reggiano cheese. Set aside. (2 minutes)

Season short ribs with salt, pepper, and cayenne. Heat olive oil in a large, oven-safe pan or Dutch oven over high heat. Add short ribs and sear until deeply browned on all sides, approximately 3 to 5 minutes per side. Transfer beef to the pan and sprinkle seasoning mixture evenly over beef. (20 minutes)

Reduce heat to medium-high and add sliced onion and mushrooms to the pan. Season with salt. Sauté until mushrooms are golden brown and onions are softened, about 5 minutes. (8 minutes)

Sprinkle flour over the onion and mushroom mixture. Stir to coat evenly and cook for 2 minutes, allowing the flour to toast slightly. (3 minutes)

Pour in chicken broth, soy sauce, and Worcestershire sauce. Stir well to combine and bring to a gentle simmer. Remove from heat and pour the mixture evenly over the seared beef short ribs. Distribute the pepperoncini peppers amongst the ribs. Place pats of butter on top of the ribs and vegetables. Cover the baking dish tightly with foil. (5 minutes)

Bake in the preheated oven until the meat is fork-tender and easily falls apart, approximately 2 1/2 hours. (150 minutes)

Carefully remove the baking dish from the oven. Spoon the flavorful sauce from the bottom of the pan generously over the beef short ribs before serving. Skim off any excess fat from the surface of the sauce, if desired, before serving. (5 minutes)

For an even richer flavor, consider using bone-in short ribs. They may require a slightly longer cooking time.
Serve these delicious short ribs over creamy mashed potatoes, polenta, or rice to soak up all the wonderful sauce.
Garnish with freshly chopped parsley or a sprinkle of Parmigiano-Reggiano cheese for an extra touch of elegance.
