Follow The Directions

01

Step

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch baking pan. (5 minutes)

02

Step

In a large bowl, cream together the granulated sugar and softened butter until light and fluffy. Beat in the eggs one at a time, then stir in 1 teaspoon of vanilla extract. (7 minutes)

03

Step

In a separate bowl, whisk together the all-purpose flour and baking powder. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined; do not overmix. (5 minutes)

04

Step

Pour the batter into the prepared pan and spread evenly. Bake in the preheated oven for 25-30 minutes, or until a wooden skewer inserted into the center comes out clean. (30 minutes)

05

Step

Let the cake cool completely in the pan on a wire rack. (60 minutes)

06

Step

While the cake cools, prepare the frosting. In a heatproof bowl set over a simmering pot of water (double boiler), combine the packed brown sugar, egg whites, water, and salt. (3 minutes)

07

Step

Using an electric mixer, beat the frosting mixture constantly for 8-10 minutes, or until stiff, glossy peaks form and the frosting has thickened. (10 minutes)

08

Step

Remove the bowl from the heat and stir in the remaining 1 teaspoon of vanilla extract. Beat for another minute until smooth and creamy. (2 minutes)

09

Step

Once the cake is completely cooled, generously spread the frosting evenly over the top. (5 minutes)

10

Step

Decorate the frosted cake: place raisins in each corner. Arrange the toasted almonds, pecans, and candied cherries artfully across the surface of the frosting. (10 minutes)

For a richer flavor, use browned butter in the cake batter.
Ensure the egg whites are at room temperature for the frosting to achieve maximum volume.
If you don't have a double boiler, a heatproof glass bowl set over a pot of simmering water works perfectly. Just ensure the bottom of the bowl doesn't touch the water.
Feel free to substitute other nuts or dried fruits for the decoration based on your preferences.

I substituted walnuts for pecans and dried cranberries for cherries, and it was still amazing! So versatile.

The instructions were clear and easy to follow. My cake turned out beautifully, even though I'm not an experienced baker.
