Follow The Directions

Step

Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish with cooking spray. (5 minutes)

In a large bowl, beat together the flour, sugar, softened butter, eggs, vanilla extract, baking powder, and salt until well combined. Pour the batter into the prepared baking dish, spreading evenly. (10 minutes)

Bake in the preheated oven until the cake layer is golden brown, approximately 20 minutes. Remove from oven and sprinkle the miniature marshmallows evenly over the cake layer. Return to the oven and bake until the marshmallows are puffed and slightly melted, about 2 minutes more. (22 minutes)

While the marshmallow layer is baking, prepare the topping: In a medium saucepan over medium heat, stir together the peanut butter and butterscotch chips until melted and smooth. Remove from heat and stir in the crispy rice cereal until evenly coated. (10 minutes)

Immediately spread the peanut butter mixture evenly over the marshmallow layer, gently pressing down to adhere. Allow the bars to cool completely at room temperature before cutting into squares. (60 minutes)

For easier cutting, chill the bars in the refrigerator for 30 minutes after they have cooled to room temperature.
Feel free to experiment with different types of chips in the topping, such as chocolate chips or white chocolate chips.
Store the bars in an airtight container at room temperature for up to 3 days.
