For an extra layer of flavor, brown 1/2 pound of Italian sausage and mix it into the cheese filling. Fresh herbs, such as basil or oregano, can be used in place of dried parsley for a brighter flavor. To prevent the manicotti shells from tearing while stuffing, use a piping bag or a zip-top bag with the corner cut off to pipe the cheese mixture into the shells. If the manicotti shells are sticking together after cooking, toss them gently with a little olive oil to prevent sticking.
