Preheat oven to 425 degrees F (220 degrees C). (5 minutes)

Place habanero pepper, mango slices, and onion slices on a baking sheet. Drizzle with vegetable oil, tossing to coat evenly. (2 minutes)

Roast on the middle rack of the preheated oven for 10 minutes. Then, turn on the oven's broiler and broil for 5 more minutes. Move baking pan to the oven's top shelf; broil until onion and mango begin to brown and habanero pepper blisters, about 3 more minutes. Remove from oven and let cool slightly. (18 minutes)

Using gloves, carefully remove the stem from the habanero pepper. In a small food processor or blender, combine the roasted habanero, mango, onion, garlic, cilantro, lime juice, and salt. Season with black pepper and cumin. (3 minutes)

Pulse until the salsa is combined but still slightly chunky. Do not over-process. (2 minutes)

Refrigerate for at least 2 hours before serving to allow flavors to meld. (120 minutes)

Handle habanero peppers with extreme care. Always wear gloves when handling them and avoid touching your face.
For a milder salsa, remove the seeds and membranes from the habanero pepper before roasting. Alternatively, use a milder pepper like a jalapeño or serrano.
If you don't have a broiler, you can increase the roasting time at 425°F, checking frequently for browning.
Taste the salsa and adjust seasonings as needed. You may want to add more lime juice, salt, or cilantro to your liking.
The salsa will keep in an airtight container in the refrigerator for up to 5 days.
