Follow The Directions

01

Step

In a small bowl, combine garlic powder, onion powder, meat tenderizer, and seasoning salt. Rub the mixture generously onto both sides of the steaks.

02

Step

Arrange 1/4 of the sliced onions in the bottom of a 9x13-inch pan. Lay the steaks across the onions. Top with more onions. Pour 1/4 of the beer and 1/4 cup of lime juice over the top. Repeat these layers until all steaks are layered in the pan, finishing with the remaining beer and lime juice. Cover the pan tightly.

03

Step

Marinate the steaks in the refrigerator for 30 to 40 minutes. Be careful not to marinate longer than 1 hour, as the lime juice's acidity can start to 'cook' the meat.

04

Step

Preheat an outdoor grill to medium-high heat and lightly oil the grate. Remove the steaks from the marinade and discard the remaining marinade.

05

Step

Grill the steaks to your desired level of doneness, approximately 2 minutes per side for well done. Let the steaks rest for 5 minutes before slicing against the grain.

06

Step

Serve the sliced steaks immediately with warm tortillas. Enjoy!

For optimal flavor, use a good quality Mexican or Cuban beer. If you can't find lomo de res, ask your butcher for thinly sliced (1/4 inch thick) boneless rib-eye from the small end of the rib roast.
Don't skip the resting time. It allows the juices to redistribute, resulting in a more tender and flavorful steak.
Experiment with different toppings for your tortillas, such as salsa, guacamole, or pickled onions.

The steaks were a little too tangy for my taste. Next time, I'll reduce the amount of lime juice slightly.
