Combine fennel seeds, cumin seeds, caraway seeds, cracked wheat, butter, molasses, and orange zest in 1 1/3 cup of boiling water. Soak for 1 hour. (60 minutes)

Add seed mixture along with baking soda, rye flour, bread flour, dry yeast, gluten flour, and buttermilk powder into the pan of a bread machine in the order suggested by the manufacturer. Select the cycle for White Bread and the Light Crust setting. Start. (Varies)

For a richer flavor, try using dark molasses.
Ensure your yeast is fresh for optimal rising.
If you don't have powdered buttermilk, you can substitute with 1/4 cup of regular buttermilk, reducing the boiling water by 1/4 cup.
