Follow The Directions

01

Step

Bring a large pot of lightly salted water to a rolling boil. Add pasta and cook according to package directions, usually 8 to 10 minutes, until al dente. Drain well, reserving about 1/2 cup of pasta water. (2 minutes)

02

Step

While the pasta is cooking, in a large bowl, gently combine the diced tomatoes, chopped cilantro, dried basil, sugar, and dried oregano. (3 minutes)

03

Step

Add the olive oil to the tomato mixture and season generously with salt and freshly ground black pepper. Mix gently to combine. (1 minute)

04

Step

Add the drained pasta to the bowl with the tomato sauce. Toss gently to coat, adding a splash of the reserved pasta water if needed to create a smoother sauce. (2 minutes)

05

Step

Serve immediately, garnished with grated Parmesan cheese. (1 minute)

For a richer flavor, consider using roasted tomatoes instead of fresh. Simply roast the tomatoes with garlic and herbs before dicing and adding to the sauce.
A pinch of red pepper flakes can add a delightful kick to this dish. Adjust the amount to your preference.
Fresh basil can be used in place of dried basil, if available. Use about 1 tablespoon of chopped fresh basil.
Feel free to experiment with different types of pasta. Penne, rotini, or farfalle work particularly well with this sauce.
