For best results, ensure your butter is very cold. You can even freeze it for 10-15 minutes before using. Don't overmix the dough! Overmixing will develop the gluten and result in tough scones. Mix just until the dough comes together. Feel free to experiment with other fruit glazes. Raspberry, blueberry, or even a simple lemon glaze would be delicious.
