Emulsify and Combine: Stir in the butter until it is completely melted and coats the kohlrabi noodles. Return the bacon and onion mixture to the skillet, and then incorporate half of the grated Parmesan cheese. Stir well to combine all ingredients. (5 minutes)

For a vegetarian option, omit the bacon and use smoked paprika to add a hint of smokiness.
