Prepare the Rye Dough: In a medium mixing bowl, whisk together salt and rye flour. Gradually add water, stirring until a shaggy dough forms. Incorporate all-purpose flour, one tablespoon at a time, until the dough is smooth and just past the sticky stage. Divide the dough into 16 equal portions.

Shape the Pies: On a lightly floured surface, roll each portion of dough into a thin, 6-inch circle. Aim for maximum thinness! Place approximately 3 tablespoons of the prepared rice mixture in the center of each circle, spreading it evenly to within 1 inch of the edges. Gently fold the edges of the dough upward, crimping them to create a boat-like shape that securely holds the filling. Pinch the sides at each end to further define the shape. Place pastries about 3 inches apart on an ungreased baking sheet, and brush the tops generously with melted butter.

Bake to Golden Perfection: Bake in the preheated oven for 10 to 15 minutes, or until the crust is firm and beautifully golden brown, and the rice porridge filling is slightly browned on top. Serve warm and enjoy!

For an extra layer of flavor, try using a combination of short-grain and long-grain rice.
Feel free to experiment with different toppings! Smoked salmon, hard-boiled eggs, or a dollop of sour cream would be delicious additions.
If you don't have rye flour on hand, you can substitute with whole wheat flour, although the flavor will be slightly different.
The rice porridge can be made a day ahead and stored in the refrigerator. This will save time on the day of baking.
