Step

Position an oven rack approximately 6 inches from the broiler and preheat the broiler.

Heat olive oil in a small ovenproof skillet over medium heat. Add kale and cook until wilted, about 3 to 5 minutes. Add fennel fronds and cook for 1 minute more.

Season beaten eggs with salt and pepper, then pour into the skillet. Stir briefly to distribute the kale and fennel. Allow the frittata to set on the bottom. Use a spatula to gently loosen the edges from the pan to prevent sticking. Once the edges are set, sprinkle the crumbled feta cheese evenly over the top.

Place the skillet under the broiler and cook until the frittata is fully set and the edges are lightly browned, approximately 5 to 10 minutes. Remove from the oven and serve immediately or at room temperature.

For a richer flavor, sauté a minced clove of garlic with the kale.
If you don't have fennel fronds, a pinch of fennel seeds can be substituted, added during the kale cooking process.
Consider adding a splash of cream or milk to the eggs for an even more luxurious texture.
Other cheese such as goat cheese can also be used instead of feta.
