In a skillet, heat olive oil over medium heat. Sauté the minced garlic until softened and lightly golden, about 3-5 minutes.

In a large bowl, combine the chicken, fennel, celery, red onion, and parsley.

For a richer flavor, marinate the chicken in a mixture of olive oil, lemon juice, and garlic for at least 30 minutes before roasting.
To prevent the fennel from overpowering the salad, consider blanching it in boiling water for 1 minute and then immediately transferring it to an ice bath. This will mellow its flavor and soften its texture.
Adjust the amount of mayonnaise to your liking. For a lighter salad, you can substitute some of the mayonnaise with Greek yogurt.
Feel free to add other fresh herbs, such as dill or chives, to complement the parsley.
