Step

Sauté the Oats (2-3 minutes): In your Instant Pot®, melt the coconut oil using the Sauté function. Add the steel cut oats and toast until they begin to turn golden brown, stirring frequently to prevent burning. Turn off the Sauté function.

Pressure Cook (14 minutes): Add the water, almond milk, grated zucchini, cinnamon, nutmeg, and kosher salt to the Instant Pot. Stir gently to combine. Close and lock the lid of the Instant Pot. Select high pressure and set the timer for 4 minutes. It will take about 10 minutes for the pressure to build.

Release and Finish (15 minutes): Allow the pressure to release naturally for 10 minutes. Then, carefully release any remaining pressure using the quick-release method (about 5 minutes). Unlock and remove the lid.

Sweeten and Serve: Stir in the maple syrup and vanilla extract. Divide the oatmeal evenly into 4 bowls. Sprinkle each bowl with chopped walnuts and serve immediately.

For a richer flavor, try toasting the walnuts lightly before adding them as a topping.
Feel free to experiment with other spices, such as cardamom or ginger.
If you prefer a sweeter oatmeal, add more maple syrup to taste.
To make it vegan, ensure your maple syrup is 100% pure.
