Turn on your Instant Pot® and select the 'Saute' function. Add the sweet Italian sausage and cook, breaking it up with a spoon, for approximately 3 minutes until browned. Add the unsalted butter, chopped onion, celery, and drained water chestnuts. Continue to cook for another 4 minutes, stirring occasionally, until the vegetables soften. Turn off the Instant Pot®. (Cook time: 7 minutes)

Stir in the chopped fresh flat-leaf parsley, salt, dried thyme, dried sage, and ground black pepper. Ensure all ingredients are well combined. Add the plain stuffing bread cubes to the pot and pour the egg mixture evenly over the bread. Gently toss to combine, ensuring the bread is moistened. (Prep time: 5 minutes)

Close and lock the lid of the Instant Pot®. Select the 'Manual' or 'Pressure Cook' function and set the timer for 6 minutes. Allow approximately 2 minutes for the pressure to build. After the timer is up, carefully remove the lid. Add the remaining 1/2 cup of chicken broth, distributing it evenly over the dressing. (Cook time: 8 minutes)

Close and lock the lid again. Select the 'Manual' or 'Pressure Cook' function and set the timer for 5 minutes. Allow approximately 2 minutes for the pressure to build. Once the timer is complete, carefully release the pressure using the quick-release method according to the manufacturer's instructions (approximately 5 minutes). Unlock and remove the lid. (Cook time: 12 minutes)

For a richer flavor, use a combination of sweet and hot Italian sausage.
If you prefer a softer dressing, add an additional 1/4 cup of chicken broth.
This dressing can be prepared ahead of time and reheated before serving. Store in an airtight container in the refrigerator for up to 2 days.
Consider adding other vegetables like mushrooms or carrots for added texture and flavor.
Toasting the bread cubes before adding them to the Instant Pot will prevent the dressing from becoming too soggy.
